Ingredients

Meatloaf:


 

  • 2 onions, grated (265g)
  • 3 eggs, lightly beaten
  • 3 garlic cloves, crushed
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1½ tsp ground allspice
  • 1¼ tsp ground turmeric
  • ¼ tsp cayenne pepper
  • 125g bulgur
  • 750g minced lamb (or beef) with 20% fat
  • 1 large courgette, grated (200g)
  • 15g fresh coriander, finely chopped (plus 5g for garnish)
  • 15g fresh mint leaves, finely chopped (plus 5g for garnish)
  • 3 tbsp olive oil
  • Salt and black pepper to taste

 

Caramelized Onion Topping:


 

  • 3 tbsp olive oil
  • 3 onions, thinly sliced (480g)
  • 1 tsp caster sugar
  • 2 tbsp pomegranate molasses
  • ½ tsp ground cinnamon
  • ½ tsp ground allspice

 

Pomegranate Yogurt:


 

  • 1 tbsp pomegranate molasses
  • 300g thick Greek-style yogurt
  • 2 tbsp pomegranate seeds (optional, for garnish)

Method

  1. Preheat the oven to 180°C: Begin by heating the oven to the required temperature, ensuring it’s set for even cooking.

  1. Prepare the meatloaf mixture: Mix minced lamb, grated onions, garlic, spices, bulgur, and herbs to create a flavorful base for the meatloaf.

  1. Rest the mixture in the fridge: Let the meatloaf mixture chill in the fridge for 1 hour to enhance the flavor blend.

  1. Shape the loaf and bake for 20 minutes: Form the mixture into a loaf and bake in the preheated oven for 20 minutes.

  1. Prepare caramelized onions: Cook sliced onions with olive oil, sugar, and spices until soft and golden for a sweet topping.

  1. Top with caramelized onions and bake: Add the caramelized onions to the meatloaf and bake for 10 more minutes for a perfect finish.
