Ingredients

Meatloaf:


 

  • 2 onions, grated (265g)
  • 3 eggs, lightly beaten
  • 3 garlic cloves, crushed
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1½ tsp ground allspice
  • 1¼ tsp ground turmeric
  • ¼ tsp cayenne pepper
  • 125g bulgur
  • 750g minced lamb (or beef) with 20% fat
  • 1 large courgette, grated (200g)
  • 15g fresh coriander, finely chopped (plus 5g for garnish)
  • 15g fresh mint leaves, finely chopped (plus 5g for garnish)
  • 3 tbsp olive oil
  • Salt and black pepper to taste

 

Caramelized Onion Topping:



  • 3 tbsp olive oil
  • 3 onions, thinly sliced (480g)
  • 1 tsp caster sugar
  • 2 tbsp pomegranate molasses
  • ½ tsp ground cinnamon
  • ½ tsp ground allspice

Pomegranate Yogurt:



  • 1 tbsp pomegranate molasses
  • 300g thick Greek-style yogurt
  • 2 tbsp pomegranate seeds (optional, for garnish)

Method

  1. Preheat the oven to 180°C: Begin by heating the oven, ensuring it’s ready to bake the meatloaf evenly.

  1. Mix minced lamb, grated onions, and spices: Combine the lamb with onions, garlic, and spices to create a flavorful base for the meatloaf.

  1. Let the mixture rest in the fridge for 1 hour: Allow the mixture to rest, letting the spices bloom and flavors meld together for a richer taste.

  1. Shape the mixture into a loaf and bake for 20 minutes: Form the meat mixture into a loaf shape and bake in the preheated oven for 20 minutes.

  1. Add caramelized onions on top and bake for another 10 minutes: Top the meatloaf with sweet caramelized onions and bake for 10 more minutes for a flavorful finish.

  1. Serve warm with pomegranate yogurt: Serve the meatloaf warm, accompanied by tangy pomegranate yogurt and a sprinkle of fresh herbs for added flavor.
